History: This wine, also one of the "historical" products of Cantina Nera, owes its name to a Valtellina dialect term, "Sorèl", a mysterious current of air at a constant temperature, around 8° C, which blows through the cracks in the boulders adjacent to the crotti, typical cavities found in Valchiavenna and which were formed directly in the rock . The crotto, thanks also to this draft, is the ideal environment both for the maturation of the wine, since there is no variation in temperature, and for the maturation of cured meats and sausages, primarily bresaola, as well as with alpine and dairy cheeses.
